Pancake Pops

Welcome to the 1st edition of Fun Food for Kids Friday!

What kid wouldn’t love these Pancake Pops?  They would be great for a holiday breakfast or a cute sleepover!

Here’s what you’ll need:
Lollipop Sticks
Pancake Mix
Oil spray
You can use a box pancake mix if you do not have your own recipe.  Simply follow the directions on the box then heat up the pan, and use a tablespoon to measure out even sized pancakes.  Drop the pancake batter onto the hot griddle. Give the pancake about a minute to set up on the griddle side so the lollipop stick won’t go all the way through, then place the lollipop stick in the batter just shy of the top of the pancake. Press stick down and use your spoon to smooth out the valley in the batter.  Once the edges start to dry out, they are ready to turn.
Cute Extras:
Individual bowls of any of the following would be delicious:  Syrup, Blueberries, Strawberries, chocolate chips, bananas, peanut butter etc.
